4 boneless skinless chicken breasts
1 large onion, chopped (I actually don't use this in mine, because we all hate onions)
1 - 8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
1 cup cheddar cheese
1 - 10.5 ounce can cream of chicken soup (regular or fat free)
1 - 15 ounce can whole kernel corn, drained
Put chicken, cream of chicken soup, and onion (if you use it) into crockpot. Cook on high for 3-4 hours or low for 7-8 hours. When the chicken is cooked, shred it. It should pull apart super easy. Drain corn, add to crock pot.
Cook yellow rice according to directions, then add to crock pot with cheese. Stir up together well, and you can let those cook together for a little bit or serve right away. Top with salt, pepper, more cheese, whatever you want!
I've gotten very liberal with this recipe.. I just now made it with two cans of corn and three boxes of the rice mix. You can make a ton or a little without stressing over the recipe too much. I'm also going to try this with wild rice mix next week, just for a change up.
I have been wanting to toss peas and stuff in there, but I'm the only one in the house who really likes peas. Maybe next time I'll add some carrots...the boys inhale this so fast I could probably sneak lots of healthy stuff in and they'd never know.
