1lb ground turkey
1 package of coleslaw mix (with carrots)
2 packages of spring roll wrappers (makes 40)
1 egg yolk
1 small packet of Soy Sauce (optional)
Oriental Oyster Sauce
1 clove of Garlic
Salt & Pepper to taste (or any other seasonings you want to play with)
Start by lightly oiling a big/medium pot(Pam spray is fine or olive oil) and brown the garlic, then cook the ground turkey until fully cooked. I usually season with oyster sauce, salt & pepper, garlic pepper/salt and a few things i have in the house until it tastes how i like it. Now this last time i used a sauce made by the chinese restaurant for their healthy dish which was made with white wine, scallions, ginger & garlic. Again try a variation of things to make the seasoning portion healthy as you want.
Once the turkey is cooked I add in the package of coleslaw mix. YOu may shred your own cabbage and carrots and even add in rice vermicelli noodles (from the oriental market, just cook as the packaging instructs).
Once the cabbage is tender but not too soft, remove from heat and let it sit. It will cook itself the rest of the way and will cool off. Let it cool at least to room temperature.
Then separate the egg yolk from the egg and put in a bowl, this is what you use to secure the spring roll once it's wrapped. You use a big spoon to spoon the filling onto the spring roll wrapper. (not teaching how to wrap, it'll show on the package lol)
set your oven to 350 and lightly grease your cookie sheet and then glaze your spring rolls with oil or spray with a good Pam Olive Oil spray and bake for 30 minutes or until desired brownness...these are soooo crunchy and so healthy and yummy!
