Baked Blueberry & Peach Oatmeal

SUPER Heathy but tastes like a cobbler! Makes a delicious breakfast! I have to contain myself or I'll eat half the pan in a day.

6 C Old Fashioned Oats
1/2 C Splenda Brown Sugar or 1 Cup regular brown sugar
4 tsp baking powder
1 t salt
4 egg whites
2 eggs
2 1/2 cups of skim milk
1/2 C canola (veggie) oil
2 t vanilla extract
1 30 oz can slices peaches (drained, rinsed, chopped)
2 C fresh or frozen blueberries (buy frozen-so much cheaper)
2/3 cup chopped walnuts

1. In a large bowl, combine the oats, brown sugar, baking powder and salt.

2. Whisk the egg whites, egg, milk, oil, and vanilla. Add to dry ingredients and stir until blended. Let stand for 5 minutes. In the meantime, chop or throw the peaches in the food processor. Stir in the peaches and the blueberries into the "batter".

3. Transfer to a 9 by 13 inch baking pan lightly coated with cooking spray. Bake, uncovered at 350 degrees for 35-40 minutes or until top is lightly browned.

Enjoy! Makes A LOT. Serve warm or cold, with extra milk, cereal, or yogurt. This makes a great breakfast for holiday guests or if you want to make a breakfast on Sunday night to last you all week!
