I have chicken in the fridge, but have no idea what I'm going to do with it! I want to fix something HEALTHY!!!!

Any ideas...........................................?? ??

I do all kinds of things with chicken. I put it in a pan with just a little olive oil and seasonings and sautee/fry it. I love making a healthy fried chicken by taking the frozen tenders and putting them in a pan with a little olive oil or Pam, then sprinkling it with low fat parmesan cheese. Basically, just keep sprinkling it with cheese as you turn it until it is coated like fried chicken. Tastes like traditional fried chicken but with only healthy fat from the olive oil or extremely low fat from the Pam. Another thing I do with it is mix it into casseroles. Mix cookeck chicken with whole wheat pasta, some 2% velveeta, skim milk, broccoli, and a little of your favorite herbs. YUMMY! I also put a couple cups of rice (preferably brown rice but white will do) and twice as much water in a large baking dish, place the uncooked chicken on top, and then pour a jar of salsa over the top of all of it and bake it until the chicken and rice are both done. There are all kinds of things you can do with chicken.
