9 oz. package prewashed spinach
4 boneless, skinless chicken breasts, uncooked
1/2 tsp. pepper
2 Roma tomatoes, sliced (I used just a medium tomato and sliced it and layed the slices on top of the chicken)
1 cup sliced fresh mushrooms (I used an entire pre-sliced basket)
1.4 oz. packet Italian salad dressing mix
2 cups shredded mozzarella or Parmesan cheese (I used a bag of 2%
16 oz package anagel hair pasta or rice (I didn't use any pasta or rice)
Place spinach in the bottom of a coated 9 x 13 inch baking dish. Place chicken on top of the spinach; season with pepper. Place the tomatoes and mushrooms on top of the chicken. Mix the Italian salad dressing according to the package directions, substituting the balsamic vinegar for regular vinegar (I also used olive oil in the dressing mix). Pour the dressing over the spinach, chicken, tomatoes amd mushrooms. Top with the cheese. bake at 350 degrees for 40 minutes. Serve over whole wheat angel hair pasta or brown rice.
