1/2 c. whole wheat flour
1/4 c. old fashioned oats
2 scoops chocolate protein powder
3 T. cocoa powder
1 T. baking powder
1/2 c. Splenda
1 apple, peeled and cubed
1 container fruit baby food (I use strawberry apple banana)
1 egg and 2 egg whites
1/4 c. low fat cottage cheese
Preheat oven to 350 degrees.
Combine oats, apple, baby food and a pinch of salt. Microwave for a minute and a half. Meanwhile, combine remaining dry ingrediants.
Let oatmeal mixture cool slightly, then combine in blender or food processor with cottage cheese until smooth. Add to dry ingrediants and add egg/egg whites. Mix thoroughly.
Spray a 12 well muffin tin with cooking spray. Put two heaping spoonfuls into each well until batter is gone. Bake for 25 minutes or until a toothpick comes out clean.
1 T. powdered sugar
1/2 c. low fat cottage cheese
2 1/2 T. Splenda
4 oz. reduced fat cream cheese
1 T. vanilla extract
Combine all ingrediants in food processor or blender. Frosts/fills 12 cupcakes.
