Alright, this is the bean soup you get at mexican restaurants made healthy. And super easy too.
In a big pot/crockpot add:
2 packages of smoked turkey sausage, diced
1-28oz can of diced tomatoes with the juice
1 large yellow onion, diced
2 bunches of cilantro, diced
8 jalapenos, diced (seed half before dicing if you want a medium heat, less for spicier, more for milder)
16oz dry pinto beans
Add enough water to fill the crockpot, put a lid on it, and cook on low for 8 hours or high for 5 hours.
You can enjoy it like this, or add some brown rice for a healthy grain and well balanced meal:
Cook up 4 cups of noninstant longgrain brown rice in 8 cups of water, then stir into the frijoles at the end of cooking. Let the frijoles sit for about an hour so the rice absorbs the flavors.
