So since V8 has so many good-for-you-vitamins, that is our base for this super easy sauce:
In a big pot on the stove, you need to add:
2 lbs of 85-15 ground turkey, browned and drained
2 each of large zucchini and squash, chopped
1 yellow onion, chopped
4 cups of low sodium V8 juice
1-28oz can of diced tomatoes
1 can of chopped jalapenos
While that gets bubbly on medium heat, add to taste:
garlic powder (I use approx 1 tbsp)
italian seasoning (approx 2 tbsp)
ground oregano (1 tsp)
dry basil leaves (1 tbsp)
When the veggies are cooked through, turn the heat off and stir in one bag of fresh spinach (chopped) and 1/2 cup of parm cheese.
I like to serve this over whole wheat penne pasta And the sauce freezes GREAT so be sure to freeze any leftovers!
