Baby Carrots with a Honey-Mustard Glaze

1 pound of baby cut carrots
1 teaspoon Dijon or coarse mustard
1 teaspoon Extra-virgin olive oil
1 1/2 teaspoons of Honey
1 teaspoon lemon juice

Steam or blanch the carrots until fork tender.
Meanwhile, whisk together the remaining ingredients.
Toss the hot carrots with the dressing.
