SUPER NACHOS:

1 lb ground meat (beef is my preference but you could use turkey or chicken too)
1 large white onion
1 pkg of taco seasoning (El Paso is what I use)
1 large jar of salsa (feel free to substitute with a homemade one if you know of one)
1 pkg of shredded cheddar (medium works best)
1 large bag of tortilla chips (ROUNDS ONLY, NO WIMPY LIGHT CHIPS...AS THEY WILL CRUMBLE TO A GOOEY MASS OF ICKYNESS)

Added toppings:

- jalepenos
- guacamole
- sour cream
- freshly fried bacon bits

Directions:

1) Set oven to Broil.

2) Brown meat in a frying pan/deep skillet till, grill the onion along with the meat. Add the following into the skillet, taco seasoning and water as per the taco seasoning directions. Once water is cooked off, then add half the of the jar of salsa to the skillet and heat through with the other ingredients.

3) Spread the tortilla chips evenly (overlapping is fine and even encouraged) on a cookie sheet, you may need 2 cookie sheets.

4) Spread meat mixture over the chips (as evenly as possible), add remainder of salsa and whatever other toppings...leaving the cheese till last. LASTLY: Spread the cheese, the more the better.

5) Put in the oven, it will only need to be in there long enough to melt the cheese (5 mins MAX.)

Its a delicious snacking food for Superbowl parties or a night of playing cards/pool/chillaxing, whatever.
