I got this recipe from WW, according to the person who posted it she adapted it from the Sweet Potato Casserole from Ruth's Chris Steakhouse!
We made it tonight and it is AWESOME. If you like sweet potatoes you will love it!
1 1/2 cups sweet potato (peeled, boiled and mashed)
1/3-1/2 cup Splenda
pinch of Salt
1/2 teaspoon vanilla
1/4 cup egg beaters
1/4 cup applesauce (optional)
1 1/2 Tablespoon Splenda brown sugar blend
1 teaspoon butter
1 teaspoon flour
In mixer, beat together all ingredients of the Potato Mixture. Flatten loosely into a casserole type dish (a meatloaf type pan works just fine). In a separate bowl, use a fork to blend the Crust together loosely. Use fingers to sprinkle lightly on top of the Potato Mixture. Bake 350º for 30 minutes. Original recipe said to let it sit for a half-hour before serving. I let mine sit for 5 minutes and it was perfectly fine. Enjoy!!!!
Servings 3 and if you are doing Weight Watchers it's only 3 points per serving
