This isn't the pie crust to serve for company, but it is quick, easy, nutritious, and a yummy substitute for graham cracker crusts. It also works well under savory pies.

1 cup whole wheat flour
1/2 cup yellow cornmeal
1/4 tsp. salt
1/3 cup neutral oil or melted butter

Preheat oven to 400*. Combine dry ingredients. Add oil and stir to form a crumbly dough. Press evenly over bottom and up sides of a 9-inch pie pan. Chill. Prick liberally with a fork and, before filling, partially bake for 10 to 12 minutes, until firm and barely colored. Fill and bake according to directions for the filling of choice.
Note: Freezing is not recommended.
