I'm currently on the pill and am thinking about using FAM to TTA. Would it be a problem if I stopped taking the pill in the middle of the pack and started temping and charting or should I finish out this pack first? I assume we would probably want to abstain until I get my period (withdrawal bleeding?) which wouldn't be a big deal since we don't DTD very often.

It's perfectly fine to stop in the middle of the pack. The transition off of the synthetic hormones will be the same whether you stop in the middle of the pack or at the end of the pack.
And yes, you would have to abstain for a bit while you learn. Most NFP methods recommend abstaining for 1 month so you can become confident in making your mucus observations without the presence of seminal and arousal fluids to make it confusing. If you are planning to learn FAM from Taking Charge of Your Fertility, I'm pretty sure Toni Weschler also recommends 2-4 weeks abstinence when you first start charting for the same reason...and then you can start to follow the rules after that.
