Shawna, this is a great question to ask now that I'm in cycle 4 of my charting BUT...

what method am I actually using?

I'm thinking it's a combination of a method od NFP and FAM. Sometimes we use a barrier and othertimes not.

I've tried looking at the different methods and I keep forgetting what each one actually does, OR I get them all mixed up.

I do temp, CM, VS, and once and awhile CP. When it comes to DTD, like I said above, sometimes we'll use a barrier (mostly withdrawal) or sometimes we'll abstain completely.

Is there a certian method that does what I do? Or did I just come up with my own type?

How did you learn the rules for avoiding pregnancy - from Taking Charge of Your Fertility? I think I recall that's what you did. If yes, and you stick to those rules for deciding when to abstain or when to use a barrier, you are using Toni Weschler's FAM. Other FAM and NFP methods include CM, VS, and CP, but have totally different rules, guidelines, and ways of interpretting those signs - so they are different methods, even if they use the same fertility markers. Kind of like the sports analogy - lots of sports make use of a ball, but they are not all the same sport because what they do with the ball is different.
