I asked a similar question once around daylight savings. =) I was told that it only took about 3 days for your body to adjust to a new time. So if you have been waking up an hour earlier consistently, you'd only need to adjust the first three or so.
My sleep cycle has gotten so insane lately that unless I'm up several hours in advance or later, I record what it says. I personally would just record what it says for an hour off. Shouldn't make too much difference. You'd have to use your judgment if it's around O time, of course. If you're up too early, you had EWCM the day before, and that early temp has you on the high side of your pre-O temps, you might want to go ahead and bump it up.
My 3, 4, and 5 DPO temps were all freakishly early this cycle, but FF still has my O date correct even though the temps were at the coverline. I guess it took into account my cm more than the temp.
