When you go to the camera store, figure out what you think fits best in your hand. It could be a Canon

Nikon, Pentax or whatever. Then you go from there. Most consumer level cameras have an auto setting so it wouldn't be too fancy. Just make sure that you buy a camera that is towards the top of your budget. You wouldn't want to buy one and figure that a year or two later, it's not "enough" for you. But remember to budget in things like extra batteries, a camera bag, etc.
Lenses vary in prices. But the best lenses are worth it and, of course, they cost a lot. It's definitely a "get what you pay for" type of thing. The "cheap" ones that are considered a good bang for your buck vary, there's one for around $100 - that's the nifty fifty, it does not zoom so you'd have to move to and away from your subject. I think a great lens for you would be a Tamron 28-75, which is about $400. You don't "need" more lenses but you'll have the option. I shoot mainly with one lens though I have more than one.

That's just the way it is. No matter how much you buy, it'll never be enough, sorry lol.
If you're looking at Canons, I would recommend the Rebel line like the XTi, XSi and XS. If you're looking at Nikons, I would suggest at least the D90.
