Depends on what kind of shoot I'm going on. For couples or families with older kids (and on location) I usually just have my cameras, lenses, spare batteries. If I'm shooting younger kids I'll make sure to have some props plus some fun squeaky toys to get their attention.
I don't travel light. I have 3 big bins that come with me that hold blankets, baskets, hats, props. I bring my backdrop stand and light stands, umbrellas etc. My fake flooring panels and baseboard, bean bag chair, camera gear including spare battery and charger just in case. Lens cleaning stuff - you just never know.
Camera, lens, extra memory cards and batteries, something that makes noise (like a ball with a bell in it or something to get babies to look). I'm an on location photographer so I don't need backdrops or anything.
For newborns, it's a whole other story: bean bags, blankets, hats and headbands, cloth diapers to put between bean bag and baby, reflector, clamps, backdrop stand, any other props I want to use...plus all of what I have listed above.
