So, I'm finding some really cool ones, and then again I'm finding a lot of repeat stuff
Something I really want to try is baked acorn rings, that sounds delicious!
Kale chips, grilled/sauteed squash and zucchini, zucchini cakes, sauer kraut, brussel sprouts in bacon grease... Also just sauteeing up some greens w/ onion/garlic etc...
And that's pretty much all I'm finding. Different variations of all of the above
I'm trying!! part of it is that I just write down ingredients and not amounts, I eyeball it all or cook by taste/smell. Slowly I'm trying to get amounts in there, I know some people would prefer exact directions
