When do you open gifts? We open famliy gifts on Christmas Eve at my sister's house. Most of my family is there that night. Santa's gifts are Christmas morning. My DH and I do our gifts on Christmas morning as well.
Do you open gifts or stockings first? we do gifts first!
Do you open gifts in any certain order? The kids start one present each and then we add in "mom and dad "gifts.
We tend to open a small gift on Christmas Eve and the rest on Christmas Day. This year we've had to be very frugal so the adults don't have much and will probably save it all for Christmas Day. Daniel can still open a small gift on Christmas Eve though as he has a couple of little things from other people.
We tend to do stockings first, then main presents.

But really I spend Christmas Eve with my family and they open gifts then, then What I said above. Then later that day inlaw gifts which is like a second Christmas (makes me sick) Then we get together with the inlaw sis and mil. Husbands family sepreated. By this time I am puking at all the stuff my kids got. And I love Christmas, well except for the actual day.
We open one on Christmas Eve, and the rest Christmas day. Stockings usually come last.
When I was growing up we always opened one gift at a time and went in the order of age (youngest to oldest) and my dad videotaped the opening of EVERY gift. Took all gosh dang morning pretty much, but it was fun.
Christmas eve my mom, brother, and niece come over for a gift exchange. We let Kayley open a gift from us and not Santa. Then, on Christmas morning she opens all of her gifts first and then we get to the stockings.

My family does Christmas eve at my dads because we have relatives that travel. Later that night we usually went to my s/o families house in miss and stay the night. LOL obviously that's not going to work now that we have a child. We will have to figure a way to work around it all.
