Preheat over to 350. I take a sirloin. Butterfly it, beat the heck out of it. Wilt some fresh spinich in a large cast iron pan with 2 teaspoons of water. I dump the spinich in an extra bowl and place the cast iron back on the stove to get hot. I season the beef then roll the spinich up in the beef. Place the beef roll seam down in the cast iron skillet. I turn it till it is brown and place the pan and all in the oven for about 15 minutes.
