Since I'm not sure when I'll O until I get crosshairs or my temp jumps up for atleast two days could I eat the pineapple core from 3dpo-7dpo instead of 1dpo-5dpo?

It's high in bromlemine (sp) which is good for implantation

I would go heavy on 3-5dpo and light on day 6 and stop. Just in case of early implantation

I went heavy on the pineapple from 2DPO-7DPO. I think I implanted on day 7 and it didn't hurt anything. The only thing I found about not eating it after implantation is because it can cause uterine contractions which can cause early miscarriage.

Is that just the core or the rest of pineapple too? I eat pineapple (not the core) on a regular basis :/

The core is the part that has what you need, but I ate the whole thing. Too much is not good for TTC. You shouldn't be eating any before O because it can affect your CM, and after implantation it can cause uterine contractions which can expel an early pregnancy. I don't want to scare anyone because lord knows people get pg all the time without following all the rules, so I really think it's all personal preference.
