For somewhere around a month, before Zoe fully wakes up we flip flop in bed, nursing from each side. She will nurse left side pull off, cry until I give her right side, repeat until its time to wake up and she's eating.

She doesn't wake up at night and hardly nurses during the day, with little to no solid foods. Is this normal?!

little to no food and little to no nursing or short nursing sessions? as babies grow, they become more efficient and breastmilk becomes more concentrated. Is she making diapers and gaining weight?

I know for a long time, we had marathon morning nursing sessions before getting out of bed, that seems normal to me

She has good diapers. She isn't interested in foods and then after the super morning nursing she doesn't nurse much during the day.

Hmmm. DD did not really eat much food until closer to 15 months, but she nursed probably 15-20 times a day (in a 24 hour period). I would just offer her as much as you can, breast wise, and when she does eat, try to make it high quality, we did a lot of avocados.
