What are you having for dinner tonight? And how did you prepare it?
I'm still a learning cook. Soups are my specialty.  We had an early dinner since I finished making my chicken soup early. I use a whole chicken, diced carrots, diced onions, large chunks of potato, sliced celery, white rice, Italian seasoning, paprika, and salt. YUM! I love making homemade chicken soup because it's packed full of veggies (which I don't eat a lot of otherwise) and doesn't have the preservatives and tons of sodium that're in canned soups.

We had kabobs from the Afgan restaurant across the street. I do cook most nights except for Saturday (my declared night off), but I wasn't feeling like cooking tonight so we ate out again  We are having roast tomorrow though!

crustless pizza quiche.
4 eggs, 1 cup flour, 2 cups milk, 2 cups shredded cheese, and chopped pepperoi, bacon, green pepper, onion, tomato, basil, oregano, and garlic.
just mix it all up and bake it on 350 for 45mins- 1hr.
very unhealthy but it tastes sooooo good.

Oh, what kind of cheese works best? Cheddar or mozzarella? Or both?

I just saw this, hope I'm not too late, did you try it last night? I usually do half cheddar and the other half either mozzarella or some kind of pizza blend. but definatley use at least half cheddar.

Nope, not too late, Jaelin!  I'm going to make it tonight! One question: Do you think the bacon's necessary? I was thinking of leaving it out since I'm not a big bacon fan.

Well, turns out I'll have to make it tommorow because we have too many errands today. So, leftover soup tonight! I'm so excited about making that tomorrow, though! I rarely try new receipes---let alone cook.  DH is the chef in this house. LoL

quiche is addictive and theres so much you can do with it. you can do the pizza quiche, or ham and cheese, or turkey and bacon, or spinach, crab quiche with green onion is my favorite. or really just whatever you like. as long as you have the eggs, milk, flour, and cheese you can be creative with the rest.
oh- but make sure any meat you use is pre-cooked.

Unfortunately, this is how we eat at least 4 out of 7 nights.  We're currently trying to change that.
And, Jaelin, the quiche is in the oven as I type!  I'll let you know how we like it.

i didnt cook on sunday, it was a fend for your self night. so the girls had canned crud and i had a sandwich. tonight though i am going to make my mexican chicken salad with cilantro and garlic dressing.
baby spinach
tomato
shredded chicken breast
onion
avocado
cheese
dressing:
half mayo (light or reg) and half fat free sour cream
garlic - minced - to taste (we use a lot because we are big garlic fans in my house  )
and 1/2 to one whole cilantro bunch.
mince cilantro and garlic together in a food processor (or by hand)
i have a large family to feed so mine usually look like this (usually have extra dressing left over to use as a dipping sauce for fries or chicken strips yummy)
1 1/2 cups mayo
1 1/2 cups sour cream
1 bunch cilantro
5-6 garlic cloves
if the flavor is to strong just add more sour cream to tone it down.
