I have taken to eating quite a bit of vegetarian meals and meat substitutes. I eat a lot of vegetarian stuff for lunch and breakfast. My sister got me started eating vegetarian dishes and I like them as they are low fat and for the most part healthier.

Well, for breakfast I eat egg whites & vegetarian sausage or bacon a lot either with toast, an english muffin or pancakes with sugar free syrup. I eat black bean burgers a lot and vegetarian chicken nuggets if I get a craving for chicken nuggets. I like portabello mushroom sandwiches too and eggplant stirfry, but haven't done that in a while because nobody else will eat it and that's a lot of eggplant to go to waste. As far as breakfast goes, I also eat oatmeal and muffins and cereal if I am really bored. I still could use some more breakfast ideas myself, but haven't burnt out on eggs yet so we'll see.

I can't do a lot of the vegetarian stuff because it is soy. I've had a breast lump removed and my Mom had a battle with breast cancer and anyone with a history like that is suppose to avoid soy if possible. And I'm allergic to mushrooms, so that rules them out for me too. I do eat a lot of veggies and fruits though, usually, so I'm still doing okay. My DH says I could be a vegetarian if it wasn't for my love of steak. He's right too, I could probably eat nothing but fruits, veggies, and whole grains if I had to be a vegetarian, but man would I miss my steak! LOL
