oh yum yum black beans lol Just kidding! I've never had black beans before so I'm interested to see how this turns out lol. On to look for some recipes!

I can't do it. I did use pinto beans and kidney beans in tonight's dinner, though. I only grocery shop once every two weeks and did that yesterday. Now I don't have the $ to get anymore groceries plus it is a real pain to take the babies to the store.

i love black beans too, but don't know how to make them. Ediets made them all the time and i love it, but it'll be interesting to see what we all come up with.

It's okay Sarah, we understand. I can't even go to the store with DJ so i can't imagine your ordeal. Just promise next time you go grocery shopping you'll try to do something with black beans and show us later. Maybe you'll get an idea from our recipes.

I'm looking forward to seeing what you make. I love cooking with beans. They are cheap and good for you so I cook with them alot!

i didn't expect to finish so fast. I made a breakfast burrito.

I used

1/4 c egg whites
1/4 c egg beater
1/4 c canned black beans (i tried to find the one with the least amount of sodium)
green onion
homemade salsa (found recipe online with just 2 tomatoes, 1/2 onion, 2 garlic cloves, tbsp lime juice*, salt and pepper to taste)
1 dollop low fat sour cream
ff shredded cheddar cheese (i know it's half a serving)
1 whole wheat tortilla

280 cals 5g fat 8g sugar 15g fiber 23g protein

the sodium is quite high, but i will even it out with the rest of my meals. It's about 800mg If you get a lower sodium can of black beans or make them yourself, you'll do just fine. U may not even want cheese (lots of sodium there) and lots of sodium in the tortilla. Maybe you can make some red potatoes instead of the tortilla and that'll work just fine.

cooked the black beans till warm, added the eggs, scrambled, mixed in green onions. At the end i just warmed the tortilla, layered some cheddar cheese, then salsa, then the eggs, then put the dollop of sour cream.
Voila yummmy

We may all be getting out to the store this weekend and if we do I'm going to pick up the ingredients. I found this WW recipe on another forum I visit:

Low Point Brownies

1 package Ghiradelli Brownie Mix (I used the double choc. one)
1 15oz can black beans. Drain the beans and rinse them, then readd to can and fill can with water.

Add beans and water to a food processor or blender and blend until it's pureed.

Mix pureed beans and brownie mix together and bake according to box directions.

It works out to 3pts per brownie for an 8 x 8 pan if you cut it into 16 pieces.

These taste exactly like regular brownies, but are filling due to the protein from the beans.

That just sounds wrong! I'm curious to see how it comes out! We won't be able to get to the store until probably Friday...so, we'll go from there!

lol yeah it does sound wrong (the beans in the brownie) but i am sure it's good, i may try it one of these days.

Black beans can also be mixed in with corn, you can make black bean soup. I think it's one of the tastiest beans.

We are having something later this week with beans, I can do black beans instead.

1lb ground turkey, hamburger, whatever you want.
onion
bell pepper
corn
beans, black in this case, I normally use the pinto I believe.
1 package cornbread

saute onion and bell pepper, add turkey
add corn and beans (cooked beans, lol)
mix cornbread and poor on top (make sure to use like an cast iron skillet or something)
put in oven and cook according to cornbread instructions.

This is really yummy I don't know the calories and all but I think its fairly well rounded.
