I think I remember reading somewhere that raw veggies, or lightly cooked ones are better than fully cooked veggies because when you cook them you generally cook out the nutrients. Is that true, or did I make it up somewhere in my mind? Anyone know?

I know I've heard that before also. I think if you steam them instead of cooking them with full on water, then they are still pretty good for you too.

yep it's true! veggies should stay bright in color and be crunchy for the most part. I hate a soggy veggie, it's like a waste! lol

yupp.. so true. The more you cook the veggies, the more nutrients are lost.

I believe I've heard this as well but raw veggies are very hard to digest so I rarely eat them raw, the best way to eat veggies cooked would be steaming them, which is what I always do.

Okay. Just checking to make sure I wasn't making stuff up again. When I made lunch today, I just cooked the broccoli for a few minutes....mainly just enough to thaw it out and warm it up a bit. That's actually what I have been doing a lot lately.
