Okay so turkey sammies and raw veggies are getting b-o-r-i-n-g... so I was trying to come up with something new. I love mexican food so I was wondering what ya'll thought about this dish:
- black beans, cooked, rinsed and drained
- long grain brown rice
- green salsa
- diced jalapenos
- diced cilantro
- diced tomatoes
- salt substitute to taste
mixed all together
Kinda like a brown rice salad, tex mex style. Eat it cold, or hot.
Yay or nay?

If you like the ingredients then it would probably be good. Personally I hate beans and tomatoes and I cannot eat rice so I personally wouldn't eat it, but for someone that liked those ingredients then it may be a good thing for you.

What would be something you would mix up for lunch instead? Something with just things that you love in it? You've got me intrigued as we eat beans and rice weekly so I'm thinking you might have some awesome ideers we could try tucked away

I do homemade chicken salad, with chicken breast, low fat sour cream, a bit of mayo, and an onion with some pepper. I also do homemade egg salad. I also have a recipe for a chicken, cabbage and cilantro salad that is shredded chicken breast, chopped up cabbage, chopped cilantro, with some mayo and lime juice. I will do a PB and sugary free jelly sandwich (half) sometimes, or a roast beef sandwich (I only ever eat 1/2 sandwich and it's always on double fiber bread), turkey sandwich, chicken sandwich, or I will take the lunchmeat by itself, tuna salad I like as well.
No troubles here on keeping lunch interesting for sure. But I don't like beans at all, never have so I won't eat/make anything with beans in it and my body doesn't respond well to rice so I typically do not eat rice either anymore.
well I'm not feeling that cold chicken either lol. or cold egg salad. no way lol. but the chicken cabbage and cilantro salad sounds wonderful! kinda like a healthy slaw of some kind, kicked up a notch! I love cabbage....mmmm. cooked, raw, doesn't matter. love it. salads too - are a-w-e-s-o-m-e. I adore using fresh spinach in place of lettuce - on turkey burgers, salads, I'll even wilt it into soups if I can get away with it. Sometime if you get the inkling to, post up some of your recipes on the recipes board I bet they would be awesome.

chicken cabbage salad is chicken, cabbage, cilantro, lime juice.
egg salad, boiled eggs, mayo, mustard, season salt
That's about it off the top of my head. they're not really "recipes" as I do not have amounts on a lot of them, I've been cooking so long and so often that I just eyeball stuff.
lol I eyeball stuff too! rarely ever measure unless I am making up a salad dressing or something that like. awesome, ty!

My Dh eyeballs stuff to. To the OP that does sound good minus the peppers!! LOL
BTW how did it turn out?
a little bland I thought, tasted like it was missing something. my problem is, I'm a southern girl, and what do most southern people say - everything tastes betta with cheese lol. I'm trying to get away from that hahahaha. I might drizzle some of my red picante sauce over it to liven it up a little today and that should do it.
oh and speaking of dh's...mine cannot handle really hot things, and he actually ate this he was like, "so babe can I have some for lunch today too" and ofc I said "suuuuuuuuuuuure punkin go right ahead" lol. and he ate it, and liked it. he said he put a hard boiled egg in his and it tasted awesome, i was like hmmm i dunno about all that hahahahaha. I like hard boiled eggs room temp or a little warmer but in a brown rice mix up like this, he has my curiosity up.
another thing I love to use to brighten things up - creole seasoning. or salt free tony cachere's. I used to use that all the time but it makes all of us cough when it gets airborne so I reluctantly had to stop using it.
all in all ... oh ya..... i'll definitely make it again.
