Kale! It's awesome in salads and pretty good cooked too.

Tonight we made kitcheree. That is a curried dish of mung beans and rice, but I use lentils instead of the beans. Anyway, had about half a bunch of kale that needed to be either used or fed to the goats, so I tore it very small and put it in there. Usually I don't like cooked greens at all, but these didn't go "slimey" even after cooking with the kitcheree for an hour. Really good!

I've also read a recipe to make kale "chips" in the oven, but haven't tried it yet. Anybody else have any ideas?

Yes. I have a fabulous soup that has kale in it. I'm going to go find it and I'll post it for you. Kale is great!!

Potato Kale Sausage Soup


Ingredients

3/4 cup chopped onion
1 tablespoon olive oil
2 garlic cloves, minced
4 cups reduced-sodium chicken broth
2 medium potatoes, peeled and cubed
1/4 teaspoon salt
1/4 teaspoon pepper
1 bunch kale, trimmed and chopped
1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
1/2 pound reduced-fat fully cooked Polish sausage or turkey kielbasa, sliced

Directions

In a large saucepan or Dutch oven, saute onion in oil until tender.
Add garlic; cook 1 minute longer. Add the broth, potatoes, salt and
pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15
minutes or until potatoes are tender.
Using a potato masher, mash potatoes slightly. Add the kale, beans
and sausage; cook over medium-low heat until kale is tender.



Here is one that I love. I will buy the lowfat turkey kielbasa. Still looking for the other one that I make all the time.

Okay here is the one that I make alot. Love it.

Italian Sausage Bean Soup

Ingredients

1 pound bulk Italian sausage
1 medium onion, finely chopped
3 garlic cloves, sliced
4 cans (14-1/2 ounces each) reduced-sodium chicken broth
2 cans (15 ounces each) pinto beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup medium pearl barley
1 large carrot, sliced
1 celery rib, sliced
1 teaspoon minced fresh sage
1/2 teaspoon minced fresh rosemary or 1/8 teaspoon dried rosemary, crushed
6 cups chopped fresh kale

Directions

In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain.
Stir in the broth, beans, tomatoes, barley, carrot, celery, sage and rosemary. Bring to a boil. Reduce heat; cover and simmer for 45 minutes.
Stir in kale; return to a boil. Reduce heat; cover and simmer for 25-30 minutes or until vegetables are tender and kale is wilted.

Let me know if you try the Kale chips and how they turn out. I have considered making some but wasn't sure how they would taste.

I did the kale chips and OMG they were absolutely disgusting. I haven't done anything else with it because they were so awful. But, if you have a taste for it, you may like them. I couldn't get past the awful taste and we threw them out.

Let me know if you do or don't like the kale chips. If you like them, well I'll assume I just don't like kale LoL, but if you don't like them, maybe it's just an awful way to have it. It's REALLY good for you, so if you like it then that's wonderful as it has tons of health benefits!
