A little late for you east coasters (so you can say what you HAD instead hehe), but what's for dinner? Making at home, or eating out?


We're having homemade stuffed bell peppers. One of my favs. Doing ground turkey instead of ground beef and dropped the olive oil from 4 TBSP to 1 1/2 tsp instead. They're baking as I type and are smelling oh so yummy!

I never have tried that recipe for stuffed peppers that you were kind enough to post. I have it saved, just seems like I never remember to have all the stuff on hand at the same time.

We had leftover "white" chili and cornbread (both homemade) and I also had two bowls of salad and a little chunk of cheese.

Oh yeah, see everything it uses I always have. Always keep the canned tomatoes under the cupboard as I use them for other recipes. Always have rice, always have ground turkey frozen in the freezer, always have bell peppers, garlic, and onion in the crisper, and always have dried spices. So, no planning really for us on them, I just have to remember to take the turkey out to defrost hehe.

Tonight we had Cola Pork Chops with Rice. I was going to fix Grilled Cajun Ranch Chicken with rice...but I decided it was too cold to grill today (upper 20's-lower 30's). We'll try the chicken tomorrow or sometime this weekend I think (supposed to be in the 50's over the weekend!).

I didn't see this last night but we had pork chops, corn and some sort of healthyish fries with sea salt.

Here is the recipe for the Cola Pork Chops. I flour and sear the pork chops on both sides before putting them in the pan and adding the sauce.

Here is the one for the Grilled Cajun Ranch Chicken too. I don't make the pasta that is with the recipe. My family likes the chicken better with rice (I specifically like it best with red beans and rice).
