I got this recipe off of Skinnymom.com and made it last night. It is wonderful. I also made some whole wheat spaghetti noodles and served it over that. So yummy. You should definitely try it.
Skinny Chicken Parmesan Casserole
2 lbs. boneless, skinless, chicken breast - cubed
1 TBS Basil leaves
2 cloves of garlic, minced
2 cups marinara or pasta sauce
1.5 cups reduced-fat shredded Mozzarella
1/4 cup shredded Parmesan
3.5 oz. garlic croutons, crushed slightly
Lightly spary a 9x13 baking dish with cooking spray. Place your raw cubed chicken in the bottom of the dish.
Top chicken layer with basil and garlic
Add pasta sauce evenly on the top
Top the sauce with your cheeses evenly
Then top all of that with the croutons (I put mine in a ziploc bag, and crushed them with a meat tenderizer.)
Bake at 350 degrees F for 40-45 minutes.
Let stand for 5 minutes before serving
