I'm making oven baked buttermilk chicken. It is delicious!! You put the chicken in buttermilk, I always use lowfat, then you dip the chicken in a mixture of flour and cornflake crumbs. Then heat up some canola oil, usually a tablespoon and brown one side of the chicken, then put the entire pan in the oven on 400 for about 25 minutes and you have delicious chicken!!

that is one of my favorite meals. I love soup beans with corn bread. DH has a friend and that's all he knows how to cook so when we eat with him that is what he always makes.

Awesome! Next time I come through TN I'm looking you up!

Well, I'm thinking when the kids have sketti I will just have salad with tuna or something like that. And maybe a bowl of granola for bedtime snack.

I was going to try a crockpot cheesy chicken casserole recipe today.....but forgot to get everything around and in the crock pot this afternoon. So we might just have chicken alfredo or something quick tonight.

We had homemade turkey burgers (ground turkey with some spices cooked on the grill) (open face for me), and salad with basalmic vinegarette dressing, and 1% milk for me and whole for my son.

We had baked chicken with rice. We've been eating that a lot so it wasn't too exciting but it was good.
