We don't count. You're talking about time spent doing school, right? Not a requirement here.
ETA: I just remembered. There is a requirement of a certain number of days, but it's something low enough that there's no way we would be below it. I'm sure the number of days we homeschool is well above the minimum, actually. Anyway, they don't ask for records of how many days we did, so there's really no need to keep track. At the beginning of the school year, on the form we have to fill out to tell the state we're homeschooling, I put that we intend to homeschool for whatever the minimum is and that way I'm sure I haven't lied or whatever.
