Sounds like you have a great plan!! Welcome! Most people are ending their school year around here, but being from NZ, are you just starting yours, or are you in the middle of the year, or what? When do you plan to begin? You should de-school for a short time. Don't spend time doing formal lessons unless that's what they want to do. Keep it fun for the first couple of weeks with independent learning, field trips, etc. Ease into the transition introducing a couple of things at a time rather than throwing all the subjects at them at once.

Sounds like you have an awesome plan in place-that's always helpful when you're trying to transition, imo. I agree though, I would take it slow at first. You just never know how a transition will go(for you, or the kids, really). I think it's best not to overwhelm yourselves right from the word go.
Sometimes even the best set plans go awry.
