Hmmm, maybe not much from a vegetarian perspective, but here is my food board on pinterest, I have quite a few things pinned for side dishes and perhaps some that can be modified for a vegetarian diet.
I use allrecipes.com and find wonderful things on there (I only make things that get 4.5 star rating or above). I cook vegetarian probably two nights per week, for the budget and for health. Our favorites are eggplant parmesan, veggie soup, ratatouille, fish tacos (just had them last night), fancied-up mac and cheese, ravioli, spinach and artichoke lasagna, black beans and rice, and portobello mushroom burgers in particular. Alton Brown has an awesome recipe for "tuna salad undone" on foodnetwork.com that we also love. If you want the recipes or links for any of these, let me know and I'll see what I can do. Eating veg IS hard!
