That could go with anything. I bought some brown rice... and Ive made a mushroom rice before and it was pretty good, but im looking for something new.

Any rice recipes to serve with beef or chicken?

Or a mexican rice?

Found this in the subforum, has anyone ever tried it?

http://www.justmommies.com/forums/f5...-and-rice.html (BBQ Summer Vegetables & Rice)

Im thinking of trying it for dinner with what veggies I have on hand. I need something to go with my Mini Meatloaves.

This is what I ended up doing.... I took my mushroom rice recipe to the extreme...

I sauted, 2 tbs of butter, mushroom, celery, garlic, green onion and fresh parsley in a skillet til the celery was soft.

Then I mixed the brown rice and 2 cups of beef broth in a casserole dish.

I added a touch of worshishire sauce and some spices to the rice/broth mix.

Then I added the veggie mix in, mixed it up and covered it with foil. I placed it in the oven... without turning it on.. for it wasnt close to dinner just yet...

About 30 mins later I turned the oven on... and rice was already softening... so it only took about 30 mins to cook all the way.

It was yum. DH loved the mushrooms, which I put in sliced, usually I dice cuz I hate mushrooms... but I thought with them cooking in butter they'd taste better and they so did!

Ill be using this for awhile, changing up the spices until I find the perfect mix.
