Here's the recipe i made today........SOOOOOOO YUMMY
Crackpot Potato Leek Soup
3 large leeks, just the white part, chopped & soaked
1 small-med yellow onion, diced
2 tbsp butter
4-5 potatoes (around 1 lb or so), peeled & chopped
2 small carrots, peeled & chopped
5 cups broth (chicken, beef, veg or a mix of any of those)
1/2 tsp dried thyme
1/4 tsp ground black pepper (or less, depending on taste, i used a bit less)
1. Melt 2 tbsp butter in a large wok over med high heat & sautee leeks & onions for around 5 min until the leeks start to wilt a bit. Put into crockpot.
2. Add potatoes, carrots, broth, thyme, & pepper to the crockpot as well and cook on high for 4 hours.
3. Puree with hand mixer in the crockpot & add about 2 tbsp of sour cream and another tbsp or so of butter, stir until sour cream & butter have melted. Adjust salt & pepper to taste.
Serve with multigrain pilsbury crescent rolls! Top the soup with another little dollop of sour cream for a nice presentation.
