It's really simple but I'm going to try and make sweet and sour chicken tonight. I'm going to make a beer batter (flour and beer) and dip nuggets of chicken breast in it. I was going to use home made sweet and sour sauce but I found a very easy recipe online for it so store bought will be my plan B.

The Healthy $1 Menu: Sloppy Joe’s in a Bowl

I want to try this. I'm planning to do it for Thursday night's dinner, so I'll let y'all know how it goes. It isn't anything really challenging, but I've never made it before so we'll see how it turns out.

I'm also planning on doing a dish using spaghetti squash this week (thinking Wednesday). I've eaten it before and liked it, but never made it myself so hopefully it turns out well.

I'm going to make chicken arepas tomorrow for dinner . It's a Venzulean type of food with corn cakes that is stuffed with a mixed chicken, mayo & mashed avocado.

I forgot to share mine! I used this marinade on deer steaks Monday night. I didn't have Soy sauce so I used Tamari but it was REALLY GOOD.

This fortnight has been one for new recipes. (I do my menus every 2 weeks)

I tried this one Almond-Crusted Halibut Crystal Symphony Recipe - Allrecipes.com which has the added benefit of being fish, which I don't like, so I got my quota of "trying something you don't like" too.

It was actually pretty decent. Had it been chicken it would have been really good.

The spaghetti squash dish turned out well. I decided on a vinaigrette instead of just oil and I added in cucumbers (dh is the only one who likes olives so I put those on the side for him). Delicious and filling! Dh said he was a little apprehensive at work yesterday because he was sort of expecting the squash to be mushy/have the consistency of the stringy "guts". He was very relieved to find out that was not the case.

I'm going to have to delay making the second dish. I had planned it for tonight but tonight is dh's company Christmas party so I don't have to cook at all. I'm thinking I'll bump it to tmrw or maybe over the weekend. We'll see, but I still want to make it this week.
