I use kosher salt in most things. It's how I was trained and I think knowing how to use salt properly to enhance flavour is a good thing. I don't usually add more on top at the end (only for some potatoes, corn on the cob, etc) and I don't think I use a whole ton in normal cooking (not compared to my chef instructor anyway) but it's certainly a staple in most things I cook.
