I have a lot of chunked pork and chicken in my freezer and it takes me ages to use it up because I have no idea what to do with it. I usually end up going with chicken/pork fried rice (which is yummy, but I don't want to make it every single week) or sweet and sour chicken/pork with rice (same kind of deal).

I could do soups, but I'm sort of struggling to think of anything that sounds good. I try to resevre pastas for meat free nights. I could do some kind of kebabs I guess. The biggest problem with that is that some of the pieces would be too small.

So tell me - what would you do with chunked meat?

What kind of pork is it? You could make carnitas.

It's pork loin. We buy them when they go on sale, and I slice them into pork loin chops and freeze them (it's awesome because the entire loin sells for $2.69/lb and to buy pre-sliced loin chops will cost you $3.99/lb :O). The chunks are the end pieces that wouldn't make clean chop-style cuts.

Carnitas aren't a bad idea.

Good tip!

Hmm i wonder how pork loin would work for carnitas. I usually use pork shoulder.

Check out supercook.com You can put in your ingredients and it'll search all the major recipe sites to tell you what you can make.

(I also buy loins and just cut out own chops)

You could use the chicken chunks in a chicken pot pie. I also use chicken chunks in an overnight chicken enchilada bake.

We never have chunked meat here so I'm of no help. And there is no such thing as a meat free night either... Woody doesn't function well on many levels with out it.

The chicken would end up in my Alfredo sauce, or in a Chinese dish. He doesn't eat pork (he find's it very greasy feeling), I'd just fry it up in a pan and coat it in bbq sauce. lol.
