I aim to make 1-2 meatless meals per week, but it doesn't usually happen on Monday. I make a lot of pastas on meatless nights (a hearty primavera is a favourite around here). Soups are another one (homemade tomato soup plus grilled cheese - which sounds juvenile but it's delicious, and we always go with havarti for our grilled cheeses - is another favourite). I've done black bean enchiladas a few times.
