Last week I made black bean, quinoa and corn burritos. Dh and I loved them, and my 3 yo dss ate 3 huge helpings (of the mixture - he's too little to be able to effectively handle a burrito

so he had the mixture with some crackers instead) so I'm assuming he enjoyed them too. My other dsc were out to dinner with their Grandma and Papa so they haven't tried it, but my oldest dsd said it looked yummy when she saw the leftovers.
I'll certainly make it again.

I don't really have a recipe to share... Unless I'm baking or there's a technique that needs to be followed I prefer to wing it. I used...
black beans
fresh minced garlic
quinoa
frozen corn
fresh cilantro, diced
cumin
salt and pepper
I would have liked to use some onions too, but since I was cooking for children too I decided against it. I'll try it another night when it's just dh and I.

We used cheese, salsa, home made guacamole and a touch of sour cream for our toppings.
