Hi ladies, I don't usually post here but I have a question for anyone who has made ice cream cake before.
My SO's birthday is about 2 days before my due date and he loves ice cream cake so I've been planning to make one for months, but as we approach the day I am starting to worry I might have the baby early and won't be able to make it at the last minute.
How long can I keep my ice cream cake in the freezer without the quality degrading?
I'm talking about a fully ice cream cake here, no actual cake. I read some stuff online about store bought versions with whip cream and eggs and they don't recommend keeping them more then a week but my cake won't have any of that stuff. Ice cream stays in our freezer for months and still tastes great, but I've never refroze softened ice cream so I have no experience on that front.
