I have several bags of this in my freezer. Any suggestions of things I can make with it? (Other than shredded pork bbq)

I made a thread similar to this. Chunked pork is a tough thing to know what to do with!

My go-to is sweet and sour pork or pork with fried rice. I'm not a big Chinese food person (it kind of comes with the territory of being allergic to one of the most common cooking oils in a lot of Asian restaurants) but those are both easy to make at home.

Someone suggested carnitas to me, too, and they turned out okay (especially considering I wasn't using the right kind of pork for that dish ). I've also use chunked pork in soups but couldn't tell you which ones off hand.

eggrolls
potstickers
grind for meatloaf (half pork half ground turkey or beef)
stirfry
lettuce wraps/cabbage rolls
potstickers
north carolina bbq (vinegar, red pepper flakes & spices)...we eat ours shredded just like that with a side of greens and cornbread
i'll stop now...
