I've only cooked with them a few times, but I kept it fairly simple. I cut them up and sauteed them in a little butter or evoo, garlic, salt and pepper and they were yummy. I've also put them into soups (minestrone was one and I think the other was a beef barley variant).

snap the ends off (throw away), cut the bean in half (or keep them whole), and wash. toss them into the crockpot with 1 small onion (sliced or chopped), a couple smoked turkey necks, enough water (i prefer half chicken broth and half water) to just cover your beans, and a 1/4 teaspoon of all purpose seasoning like season all (you will have to adjust depending on the liquid you use...obviously you don't want it too salty so if using a broth, you want to use less seasoning and more if you're just using water), put on lid and let simmer on high for an hour or two and cut back to low heat...until they are done to your liking.

I've always like my grandma's green beans so I gave her a call to see how she made them. She uses frozen for hers, but I thought it would probably work for fresh too. I rinsed the beans off and cut the ends off the beans and cut into bite size pieces. Threw the pieces into a pot of boiling water for 10 minutes then drained and put them in the crock pot. Added enough chicken broth to cover as well as 1/2 pound of bacon with the grease. I let it cook overnight. Tasted them this morning and they tasted just like hers!

Thanks for all the ideas ladies! Will have to try some of them!
