snap the ends off (throw away), cut the bean in half (or keep them whole), and wash. toss them into the crockpot with 1 small onion (sliced or chopped), a couple smoked turkey necks, enough water (i prefer half chicken broth and half water) to just cover your beans, and a 1/4 teaspoon of all purpose seasoning like season all (you will have to adjust depending on the liquid you use...obviously you don't want it too salty so if using a broth, you want to use less seasoning and more if you're just using water), put on lid and let simmer on high for an hour or two and cut back to low heat...until they are done to your liking.
