So before our honeymoon begins my husband and I have some good friends coming to stay with us for a few days and the wife of my husband's best friend is a vegetarian. I figured it would be nice to bring them home from the airport and not worry about grabbing groceries on their first night here and instead cook a dinner for all of us. Last time they were here for our wedding, I didn't know she was a vegetarian and made chicken wings So after that ordeal I definitely wanted to make a delicious dish that all of us could enjoy and would be vegetarian friendly.
So does anyone have any good go to recipes for vegetarian dinners?
As far as what we like, none of us are super picky eaters and we all like to try new stuff!
Rösti Casserole with Baked Eggs, Black Bean and Cheese Enchiladas with Ranchero Sauce, Lentil-Barley Burgers with Fiery Fruit, Vegetable "Meat" Loaf, Roasted Asparagus and Tomato Penne Salad with Goat Cheese, Tuscan White Bean Soup with Escarole are some really good dishes. You can google them to know the recipe. Your friend's wife will definately like the food.
