i'm sure we all make nacho's a little different than one another - just wondering how YOU make them?

I make mine by melting regular velveeta cheese (1/2 block or so) and mexican velveeta cheese (whole small block) in the microwave. while that is melting i will pour some hot chili beans in the crockpot and mash them with a potato masher - i like mine a little chunky, so i stop at the consistency i like. if the grocery store i am at has jalapeno relish, i put that in there - but it is pretty hard to find. if no jalapeno relish then i just put some diced up jalapenos in with the beans, and sometimes a can or ro-tel chili fixin's. when the cheese is all melted i pour it over everthing and stir it up really good and keep the crockpot on low so they stay warm all day. YUM!!

We never eat nachos, but this topic reminded me of a yummy afternoon snack my brothers and I used to make after school. We used to take some tortilla chips, sprinkle some shredded cheese on top of them, cube up some ham and sprinkle that on top, then microwave the chips until the cheese has melted. Then we used to top it with sour cream and salsa. Yummy!

I usually make up taco meat and put that over the chips, then sprinkle cheese over everything and bake until the cheese is all melty. Then I serve it wtih sour cream and salsa. I don't like things too spicy, but I will get jalepenos for DH if he wants them.

We usually have nachos the day after tacos to use up the leftovers. I make mine more like a taco salad.. cheese, taco meat, tomatoes, salsa, lettuce.. sometimes beans. Yummy!

Or sometimes just cheese and tortilla chips. I'll melt Velveeta and eat it as dip but hubby always just shreds some cheddar onto chips then nukes it
