Lemon Pepper Baked Chicken
Recipe:
You can use whatever chicken pieces you like but I had thawed out 4 chicken halves (leg and thigh connected). If you use smaller pieces, only use 1/4 tsp of the seasonings instead of 1 tsp per chicken piece to season on both sides.
2 Tbsp olive oil
1 tsp salt (per chicken)
1 tsp pepper (per chicken)
1 tsp chicken seasoning or rub (per chicken)
1 tsp season salt (per chicken)
1 tsp Lemon pepper seasoning (per chicken)
NOTE: You can substitute lemon juice and grinded black peppercorn instead (1 tsp of each)
2 Tsp of butter
1/4 cup water
Pre-heat oven to 350 degrees.
Oil bottom of baking dish with oil and pieces of butter. Wash chicken and place in dish. Season chicken on both sides with salt, pepper, chicken seasoning, season salt, and lemon pepper seasoning. Place water in dish after seasoning. Cover with aluminum foil and poke holes in the aluminum foil.
Bake for 40 minutes. Take out and take aluminum foil off and bake for 7 minutes.
NOTE: The water and aluminum foil is so that the chicken wont get dry and will be nice and moist.
