This is my favourite recipe and it can be easily made vegetarian too.
For 2 people you need:
2 chicken breasts or one small bag of quorn pieces (V)
2 peppers
2 chili peppers
2 cloves of garlic, pressed
Tomato puree
Ginger
Chili powder
1 lime
Olive oil
Tortillas/Wraps
First, chop the chicken breasts into pieces, and fry your chicken or quorn in olive oil and the garlic.
When just cooked, add chopped peppers and chili peppers. If you like it HOT, don't de-seed your chilis: if you don't, obviously, de-seed them!
When the peppers are also looking/feeling/tasting cooked, splat in some tomato puree. Half a standard tube is about right. On top of it, grate the rind of your lime, then squeeze in its juice. Add 1tsp of ginger and 1-2tsp of chili powder, to taste.
Simmer for 15 minutes on a low heat.
Done!
Wrap the mixture in tortillas to serve.
Cubed avocado, mild cheese and salsa make nice accompaniments. I usually make my own salsa with about a quarter of a cucumber diced, about 2-3 tomatoes (depending on size) diced, a splash of balsamic vinegar and a lashing of extra virgin olive oil, plus seasoning. 
Enjoy! Nice and warming for the winter evenings and pretty healthy too (unless you need to avoid nightshade foods).
