So I made a super yummy casserole last night for the first time.

VegYum Mac & Cheeze

I recently went vegan, so keep in mind that there is no actual cheese in this, but its SO creamy and delicious. Even my DH ate a huge bowl of it and said it was really good! (and he is mr. i-love-meat-and-cheese!) The base is made with potatoes & carrots so it's a lot healthier than a cheese base.

I subbed in a few tbsp of multigrain breadcrumbs that I had rather than toasting the bread and processing it into crumbs. I just used enough to cover the top.

If you are thinking about trying a vegetarian meal once in a while this may be the recipe to start with, it would be really good with a nice salad, though i was kinda lazy and just ate the casserole

fyi i made this again i used probably about 4 cups cauliflower (a whole head of it) instead of the broccoli. i also doubled the potato/carrot/water part, but used the same amount of margarine and maybe only a few extra cashews. i added probably half a cup of the steamed cauliflower into the sauce puree too. Effectively this doubles the amount of sauce you make but reduces the fat content of the entire batch of sauce. you make a lot more casserole by adding more veggies, and reduce the calories/carbs per serving since there are more veggies in each serving. it was to diiiiiiiiiieeeeeeee for made this way, even better than the first time, so creamy and yummy!
