For all of us ladies who want to eat healthy prior to baby making...this is a WONDERFUL Cooking Light Recipe...BTW--I highly recommend that magazine...it's healthy, gourmet style food.

Skillet Chicken Breast Aglio e Olio

Ingredients:
- 6 skinless, boneless chicken breast halves
- 1/2 t salt, divided
- 1/3 cup all-purpose flour
- 1 T olive oil
- 2 T butter
- 8 garlic cloves, thinly sliced
- 2-3 T capers, drained
- 4 pickled hot cherry peppers, halved and seeded
- 1 cup vegetable broth
- 1 T dry breadcrumbs
- 3 T chopped fresh flat-leaf parsley

1. Sprinkle chicken w/ 1/4 t salt. Dredge in flour.
2. Heat oil and butter in a large nonstick skillet over medium heat. Add chicken, cook 4 minutes on each side until browned.
3. Add garlic, cook 30 seconds. Add capers and peppers, cook 30 seconds. Add broth, bring to a boil.
4. Reduce heat and simmer for 5 minutes or until chicken is done. Stir in breadcrumbs; cook until liquid thickens. Add remaining 1/4 t salt if needed.

Nutrition:
1 chicken breast with 2 1/2 T sauce = 286 calories; 8.5 g fat; 9.1 g carbs.

From 24 Hour Fitness Recipe of the Day

Chicken Relleno Recipe

12 boneless, skinless chicken breasts
6 canned whole green chilies, halved and seeded (can use a hotter chili if desired)
12 ounces reduced-fat Monterey jack cheese sliced into thin strips
1 cup dry breadcrumbs
1 1/2 tablespoons chili powder
2 1/4 teaspoons ground cumin
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/3 cup skim milk

Flatten chicken breasts between wax paper to 1/4-inch thickness using a meat mallet or rolling pin. Place 1/2 green chili and 1 ounce cheese in the center of each chicken breast. Roll chicken lengthwise and secure with wooden toothpicks.

Combine breadcrumbs and next 4 ingredients. Dip rolls in milk, then dredge in breadcrumb mixture to evenly coat. Place chicken in a baking dish sprayed with nonstick cooking spray. Bake uncovered at 400 degrees for 30 minutes or until tender.

Makes 12 Servings
Serving Size: 1 chicken breast

EASY! This recipe is really simple and healthy! If you want it to have practically no fat, just use less or no cheese.

Turkey Ziti

1 package of noodles (ziti type)
1 can of sauce
1 can of tomatoes (seasoned italian style)
1 package of ground turkey (or ground beef if you want)
1-2 packages of part-skim mozzarella, grated

Boil the pasta and brown the turkey. After the turkey is cooked, break it up so it's smaller pieces. Drain the pasta, then combine the pasta, turkey, can of sauce, can of tomatoes, and bag of cheese in a big bowl and mix. Pour into a glass pan.. 9 x 13? Sprinkle some more cheese on top. Bake for 30-45 minutes until the cheese bubbles. YUM!

Yummy! The turkey ziti sounds great! I never knew how to use ground turkey - I'll have to try this one!
